Cold weather always brings a desire in me to cook soups and chili. I have two favorite recipes that I pull out every year. To increase my soup repertoire, I would love to take this cooking course at Winthrop Rockefeller Institute on Petit Jean Mountain near Morrilton.
“Soup Du Jour” is the topic of the Jan. 8 and 22 Saturday Chef’s Series at WRI. Chef Jason Neidhardt of Boulevard Bread Company will teach how to correctly prepare base stocks from fish and shellfish, vegetables, mushrooms, chicken, and beef. You learn how to prepare weather-appropriate soups using seasonal ingredients.
