Cotham's Fried Green Tomatoes

Ingredients:

  • Green tomatoes (if the tomatoes are starting to turn, they will not work)
  • Cotham's Catfish Seasoning (available for purchase from Web site) or seasoned cornmeal
  • Oil

Preparation:

Slice tomatoes about 1/8th inch thick (or to your preference)

Soak the slices in ice water for about 5 minutes.

Heat at least an inch of oil in skillet or deep fryer to 350 degrees. Take tomatoes out of water, coat with catfish seasoning or cornmeal, and fry for around 8 minutes, turning once.

Drain then serve with your favorite dressing. The restaurant prefers ranch dressing.

Recipe Description & History

One of the true legendary Arkansas restaurants, you can't come to The Natural State without a visit to Cotham's Restaurant. The original location in Scott is housed in a 1917 general store where "The Elite Meet to Eat." A newer location is located a block from the Arkansas State Capitol building in Little Rock. Popular with politicos (a favorite of former President Bill Clinton), movers and shakers, along with farmers, the working class and locals, the eatery is famous for its "hubcap burger." Other selections include handmade onion rings, fried catfish, chicken and dumplings, plus a Southern specialty: Fried Green Tomatoes.
