Cheeseburger Mini Muffins

Ingredients:

1 pound ground chuck
- 1 small onion, chopped
Preparation:
Brown ground chuck and onion until no longer pink. Drain fat.
Wet Mixture:
2 eggs, beaten
3/4 cup ketchup
1/4 cup mustard
1 stick butter, melted
3/4 cup milk
Dry Mixture:
2 1/2 cups flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon salt
1 1/2 cups cooked rice
Mix together dry ingredients. Make sure rice is covered with flour.
Add wet ingredients to dry mixture until moistened. Fold in beef mixture and 2 cups grated cheddar cheese. Fill greased miniature muffin cups 3/4 full. Bake at 425 for 15 to 18 minutes. Cool for 5 minutes before removing from pans. Serve with mustard and ketchup on the side if desired. Refrigerate leftovers.

Arkansas leads the country in rice production with over half of the nation's rice grown here. So it's only natural there are festivals celebrating this crop. Two are held in October each year - the Arkansas Rice Festival in Weiner and the Grand Prairie Rice Festival in Hazen. The former hosts the Riceland Rice Cook then publishes the winning recipes. Featured here is the 2005 Grand Prize winner, also a winner in the bread category.
