2 cups self-rising flour
- 1 1/3 cup sugar
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground allspice
- 1 cup salsa (your choice)
- 1/2 cup Crisco Butter Flavored shortening
- 2 eggs
- 1/3 cup water
- 6 ounces cream cheese, softened
- 4 cups powdered sugar
- 2 tablespoons butter, softened
- 1/2 teaspoon vanilla
Mix flour, sugar and spices in mixing bowl. Add salsa and shortening. Beat 3 minutes or about 300 strokes (if mixing by hand). Beat in eggs and water until well blended or about 300 strokes if mixing by hand. Grease two (10 inch) Dutch ovens for a two-layer cake. Bake until a toothpick inserted in the middle of the cake comes out clean. Cool and frost with cream cheese icing.
For frosting, combine cream cheese, powdered sugar, butter, and vanilla with mixer until well-blended; frost cooled cake.

One of the best-known Arkansas summer festivals is the Bradley County Pink Tomato Festival, held each June in Warren as it has been for over 50 years. And one of the more unusual and popular events at the festival is the All Tomato Luncheon, where every dish entered includes tomatoes - even desserts. As many Arkansas food festivals do, the folks in Bradley County have compiled a cookbook featuring their famous fruit/vegetable. Here is one of many cake recipes that have been served over the years.
