Taught by Susan Belsinger

This cooking class will feature some discussion and demo as well as lots of hands-on food prep using springtime bounty to create delectable recipes. Susan is a “flavor junkie” and she will share her thoughts about how to achieve maximum flavor and how smell and taste work together. We will taste simple ingredients to experience sweet, salt, sour, bitter, umami and pungent.

Then we will prepare some of Susan’s favorite recipes from her new book The Perfect Bite using seasonal produce, herbs and flowers. You’ll have to trust that they will be delicious—the recipes will be decided upon by which fruits, veggies and botanicals are available at the peak of season. For sure, we’ll use the harbingers of spring to make a few savories, a salad, a thirst-quenching beverage and something sweet so all tastebuds will be satiated!

Bring an apron, kitchen knives (chef and paring), a wooden cutting board if you prefer one, and a to-go mug or drinking jar.

Admission: $22 registration fee to Ozark Folk Center upon signing up for class; $100 fee for class due at start of class (cash or check please); $30 non-refundable materials fee to be paid in advance when you sign up.
